GANESH CHATURTHI Day-3: Instant Dry fruit Laddoos

On day three of the Lord Ganesha’s auspicious arrival we will prepare something of high nutritional value so that we can retain the energy to prepare elaborate offerings for the weekend. These dry fruit laddoos are rich in minerals, vitamins, Iron and calcium. Foxnuts are very rich in calcium and are considered ambrosial for pooja offerings too. These laddoos have a long shelf life and can be eaten just like energy bars on the go. Taste wise they fare better than any market sweet as we prepare these with almost no oil and very less sugar.

 

Cooking time: 20 Minutes

 

Ingredients:

Almonds: 50 gms.

Cashew: 50 gms.

Walnut: 50 gms.

Dates: 50 gms. (Finely chopped after soaking in lukewarm milk for 10 minutes)

Chestnuts: 10 gms.

Ghee: ½ tsp.

Condensed Milk: ½ Tin

Cardamom powder: 1 tsp.

Cooking steps:

 

Roast all the dry fruits on medium flame and blend in the mixer jar to turn it into a coarse mixture.

Now heat a thick bottomed Pan and pour in the ghee. When the ghee melts, add the foxnuts and stir fry them, crush them and keep aside. In the same Pan add the coarse mixture we prepared, along with the crushed Foxnuts and finely chopped dates. Sauté for a 1 minute to mix the ingredients evenly. Now add cardamom powder. Mix well. Afterwards, pour in the condensed milk slowly to the mixture and keep stirring until the mixture blends properly and becomes dough-like in consistency.

Shift the mixture in a flat platter. Leave it for 2-3 minutes.

 

Binding:

 

Grease your palm with ghee/ clarified butter and take a spoonful of dough to form laddoos.

 

Variations:

Chocolate syrup can be used instead of condensed milk as kids love chocolate more.

Coconut powder/ Peanuts/ Sesame seeds can also be added after roasting to these laddoos.
