How to make quick and healthy homemade Laddoos

Ganapati has arrived mid-week this year and many of us don’t find time to prepare the elaborate Prasadam. So here is a quick and healthy homemade recipe which can be prepared in a jiffy and gives you the satisfaction of offering mouthwatering modaks (laddoos) to our beloved Ganesha instead of market sweets.  So let’s get going…..

Cooking time :20 minutes.

Ingredients :

Coconut powder -250 gms

Ghee/ White butter – 1 tsp.

Milkmaid – 1 tin

Milk powder- 2-3 tbs.

Green cardamom powder -1 tsp

Food coloring -a pinch (optional)

Saffron – 10-12 strands soaked in  ¼ cups of lukewarm  in milk.

Resins – 15-20 (for filling)

 

Cooking steps:

Heat a thick bottomed pan on medium flame,add ghee. When ghee melts add coconut powder to the pan and keep stirring the pan occasionally. Let the coconut powder turn golden.

A rich aroma of the roasted coconut will start coming, add green cardamom powder and milk powder to the roasted coconut powder. Stir to mix evenly. Now we can add half the tin of milkmaid and mix well.

Now we can add the Saffron to the mixture and mix it evenly. We can add orange/ yellow food coloring to add up more color to the modaks. Shift the dough in a flat platter and let it cool for 2-3 minutes.

Binding:

Wet your palm with water and take out one teaspoonful of mixture prepared.

Place the mixture in the center of your palm, and press it with your thumb. Now place one resin in the center of the dough and fold to shape the dough as modak. You can use mold as well to get that perfect shape. (In case of mold, use ghee for greasing).

Your quick Kesar coconut modak is ready.

Variations:

We can change the filling to a choice of dry fruits. Roasted and crushed almonds/ walnuts/ cashews go wel as filling with this modak.
