Choley chaat & Rice vermicelli with vegetables

CHOLEY CHAAT

INGREDIENTS FOR CHOLEY CHAAT:

400 gms greend peas or fresh green choleya

Salt

3 tsps mustard oil

1 tsp cumin seeds

1 dried red chilli

1 large onions chopped into big chunks

2 chopped tomatoes

3 chopped cloves garlic

1 tsp roasted cumin powder

1 tsp pomegranate powder

Salt

1tsp chilli flakes

1 tsp chaat masala

1 cup cornflakes

This chaat tastes very good with both fresh choley or green peas. Heat the oil and add the cumin seeds and dried red chillies. Next add the onions and tomatoes and allow to cook till onions are just translucent. Allow to cook till translucent and add the choley or peas. Add salt and the spice powder. Mix gently and cook over low heat for 2-3 minutes. Put off the heat and add a tsp of lemon juice if required as per your taste. Top with cornflakes and serve as a chaat/ snack.

RICE VERMICELLI

INGREDIENTS FOR RICE VERMICELLI WITH VEGETABLES

1 cup rice vermicelli

Salt

2 tsps sesame oil

2 cups fresh vegetable s including chopped bean, carrots, broccoli,

peas, tomatoes (optional)

1 tsp pepper powder

2 tsps lemon juice

10-12 curry leaves

Heat 300 ml of water and add salt to taste. Add the rice vermicelli and put off the heat. Allow the vermicelli to stay in water for 5 minutes. Drain and keep aside. Heat the oil and sauté the veggies till just tender. Mix in the curry leaves and allow to splutter. Mix in the cooked vermicelli and salt to taste. Just a pinch or two. Mix in the pepper powder and mix gently.

Serve as a tiffin, snack or for breakfast.
