Urad dal — tomatoes N garnished mint & Crabs in coriander and mint

Urad dal with tomatoes garnished with mint

INGREDIENTS:

1 cup urad dal – white lentils

1 medium sized onion chopped

2 tomatoes chopped

4 cloves garlic chopped

2 green chillies

1 tbsp ghee

Salt

1 tsp turmeric powder

1 tsp roasted cumin powder

Mint leaves for garnish

Optional

2 tbsps ghee

1 tsp jeera seeds for tempering

Soak the urad dal in water for 10-12 minutes. Heat the ghee and fry the onions, tomatoes, garlic and green chilies till lightly fried and onions turn light golden. Mix in the drained urad dal. Stir over low heat for a minute adding the spices. Mix in 3 cups water and pressure cook till dal is tender and mushy.

Adjust the consistency by adding a little warm water if you want it thinner in consistency. Check for salt and serve garnished with mint and green chillies.

If you want a tadhka then heat the ghee add the cumin seeds and allow to splutter. Pour over the dal and serve with steamed rice or parathas.
