CHICKEN EGG MASALA
Ingredients for Chicken Egg Masala:
6 hard boiled eggs
2 cups cooked boneless chicken thick strips
2 sliced onions
3 chopped tomatoes
6 cloves chopped garlic
3 chopped green chillies
2 cups fresh peas
1 tsp turmeric powder
2 tsps curry powder
Half tsp anardana powder
Salt
3 tbsps oil
Heat the oil and fry the onions and garlic till translucent. Lower the heat and add the tomatoes. Cook till soft. Mix in the chicken shredded strips and continue to cook on low fire adding salt and spices. Cook for further 2 minutes adding 2 tsps of oil. Cook till masalas are cooked. Add the peas and stir and cook on low fire for a further 2-3 minutes. Add the boiled eggs, mix very gently and serve with paranthas.
CHICKEN BURGER PATTIES
Ingredients for Chicken Burger Patties:
For the chicken mince:
1 kg minced chicken
3 tbsps oil
Salt
1 tsp turmeric powder
1 tbsp curry powder
1 large onion finely chopped and fried
2 chopped green chillies
2 tbsps grated carrots
1 cup peas
4 cloves garlic finely chopped
Other ingredients for patties
3-4 boiled mashed potatoes
3 tbsps cornflour
1 beaten egg
Oil for pan frying
Prepare the minced keema first. Heat the oil and fry the chopped onions and garlic till onions are translucent. Mix in the chicken keema, grated carrots and stir fry adding salt to taste. Continue to cook and stir till all the water is absorbed. Mix in the peas and the curry powder and cook on low fire, stirring all the time for 3-4 minutes. Remove and cool to room temperature and place in a large mixing bowl. Add to this the mashed potatoes, cornflour and beaten eggs. Mix well. Add a little more salt and mix gently. Divide into portions and shape into round patties. Heat a tava or nonstick pan. Add enough oil for pan frying. Fry few patties at a time. Cook on low fire. Turn over so that both sides are golden brown and crisp. The burger patties are ready and can be placed in burger buns and some salad to make a delicious burger.
