On the fifth day of the Buddhinath, the lord of wisdom’s arrival, we will prepare malpua for prasadam. Malpua is a pancake served as dessert in the Indian subcontinent during festivals. It has many variations. Usually, these fritters are dipped in syrup after they are fried. However, today we will try a healthier version, where we will prepare pancakes on tawa with almost zero oil, and dip them in flavorful thickened milk.
Cooking time: 1 hour
Ingredients:
For the Dip:
Milk: 1 liter.
Cardamom powder: 1 tsp.
Choice of dry fruits: 2 tbsp. (roasted and crushed.)
Corn flour – 1 tbsp.
Sugar: to taste.
For the Malpua batter:
Refined flour (Maida): 1 cup.
Milk powder: 2-3 tbsp (Milk can also be used instead, milk powder adds rich texture to the batter)
Baking soda: 2 pinches.
Ghee: 2-3 tsp
Sugar: to taste.
Milk/ water to form batter
Desiccated coconut powder: 2-3 tbsp.
Dry fruits: 2 tbsp. (Roasted and crushed)
Ripe Banana: 2 nos. (mashed) Optional
Cooking steps:
In a thick bottomed pan pour the milk and let it thicken for half an hour, stirring it occasionally on medium flame. When the milk comes to boil add the cardamom powder, dry fruits and sugar to it. Dissolve the corn flour in normal water and add to the milk. Let it thicken. Keep stirring occasionally.
For the batter:
In a large bowl mix Maida, Milk powder, desiccated coconut powder, dry fruits and baking soda.
Now add milk/ water to make the batter. The batter should not be runny. It should be of the consistency of idli batter. So, add milk slowly and keep checking the consistency.
Preparing Malpuas:
Take a non-stick pan/ tawa and heat it, brush it with ghee and pour in a ladleful of batter to make small pancakes. Flip the sides once done from one side. Brush it with ghee and let it cook from the other side as well. Shift the pancakes on a plate. Prepare the next batch similarly.
Add the malpuas to the thickened milk and let it cool for some time. Your Malpuas are ready for Ganesha’s Prasadam.
Variations:
Instead of thickened milk the malpuas can be added to sugar syrup also.
Can be eaten as pancakes with honey/maple/ chocolate syrup.
For the batter we can straight away use Gulab jamun mix by adding milk, coconut powder.
